8 small Eggplant 2 Onions(finely chopped) 3 tsp ginger & garlic paste 2 tsp sesama seeds (Til) 2 tsp dry coconut 2 tsp poppy seeds (khaskhas) 1 tsp cashews 1 tsp coriander seeds (Dhania) 1 tsp Garam Masala 4 tsp Oil 2 tsp Tamarind pulp 2 tsp Red chilli powder Cilantro salt to taste
1. Slit all the eggplants into 4 slices (don't remove the Upper part) and put some salt with finger 2. Heat oil and fry the onions for 5 min and add baigan (eggplant), salt, ginger, garlic paste & red chilli powder and put the lid on and cook until baigan become smooth 3. fry all the masala seeds 4. paste the masala with water 5. now add masala paste & tamarind pulp to the baigan and cook for another 15 min 6. add cilantro and serve hot with Rice & Roti
